FARM TO table

In 2005, DFS expanded their operations by returning to the founders’ ancestral land to boost their global offerings, making the charming, southeastern Italian peninsula of Puglia, home base for their European operations. The decision to base our European operations in picturesque Puglia stemmed from its centuries-old history of being Europe’s most abundant, premium agricultural area.

PRODUCT

The premium, fresh ingredients we use to create our artisan pasta, are sourced from generational family farms which are located within 200km of our facilities.

  • Wheat - Puglia wheat is the crown jewel of our ingredients. Since 1915, the ancient durum wheat semolina has been harvested in accordance with peasant traditions to maintain a consistent, unchanged chemical-physical composition that has always set it apart

  • Olive oil - from Olio DeCarlo, a family-owned, highly-awarded, green manufacturer of olives and olive oil since 1598

  • Vegetables - for three generations, Spirito Contadino has been the “peasant spirit” of Puglia, and grows and harvests ancient and rediscovered vegetables that are representative of the Puglia culture

  • Cheese - Deliziosa dairy farm was founded in 1992. These master cheesemakers convert the best raw milk from selected, local Puglia dairy farms into unique, flavorful cheeses

  • Butter - Granarolo is an historic Italian company producing fresh butter made only from Italian milk from local dairy farms for over 60 years

  • Tomatoes - tomato growing and harvesting by Viander il Mangiarbene, draws inspiration from a 14th century recipe book produces sauces made of the tomato pulp of 100% locally grown tomatoes in the Lecce region of Puglia

  • Eggs - come from a free-range chicken and hen farm, Uova Belmonte, that produces flavorful, natural eggs, supplied fresh to us daily


PROCESS

Our location within the ancient lands of Puglia naturally allows for “new world” SUSTAINABILITY due to the proximity of bountiful agricultural lands.

We source our ingredients from local farmer suppliers, all located within 200k, of our production facility - which is also solar-powered. We work our farmland and harvest every grain of our wheat fields.


USA INBOUND FOOD PLANT

Distinctive, pre-cooked handmade pastas, pasta meals and sauces, specifically catering to economy meals for U.S. inbound  

  • Our 22,000-sq. ft. production facility has capacity for 16,000 finished meals daily with heat-seal capability. We currently have over 20 entrée meals in rotation.

  • Our 30,000-sq. ft. freezer + warehouse facility has capacity for over 800,000 units.

PEOPLE

DFS partnered with Sabatelli Gastronomia, master pasta makers, to create 100% scratch-made pastas using locally grown and sourced ingredients from our network of nearby family-owned growers and farmers.

In 1976, Donato Sabatelli opened his small workshop to realize his dream of being a master pasta maker, interweaving Puglian traditions with the ancient durum wheat semolina grown in that region since the early 1900s. Today, with the help of Donato’s sons, Sabatelli Gastronomia is a family-owned, premium manufacturer in the production of frozen pasta - simple, filled and special - and in the production of ready meals in mono and multi portions.
